Tart and Tangy Grilled Chicken Recipe

Ingredients

Before you fire up the grill, make sure you have all the ingredients necessary to cook this tasty meal. This recipe serves four, making it perfect for a family dinner or a small get-together.

  • 4 broiler-fryer chicken quarters
  • 4 tablespoons butter
  • 1/2 cup finely-chopped onion
  • 1/2 cup wine vinegar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup sugarless all-fruit orange marmalade

Directions

Preparation

  1. In a small frying pan over medium heat, melt the butter. Add the chopped onion, and stir until clear, about five minutes.
  2. Stir in the vinegar, soy sauce, and orange marmalade. Pour the mixture into a food processor or blender, and blend for about one minute.
  3. Sprinkle the chicken with salt and pepper, and arrange in a single layer in a shallow bowl. Pour sauce over the chicken, cover, and refrigerate for a minimum of two hours.

Grilling

  1. Place the chicken on a prepared grill, skin side up, about eight inches from the heat. Pour the marinade in a small saucepan on the grill or side burner, and heat until boiling.
  2. Grill the chicken, turning and basting with sauce every 10 minutes. Do this for about one hour or until you can insert a fork in the chicken with ease.
