What you’ll need:
- 1/2 cup fresh tomato salsa (mild to hot)
- 1/4 cup fresh lime juice
- 1 teaspoon Dijon mustard
- 1 clove minced garlic
- 4 Alaskan salmon steaks or fillets (4-6 oz each, thawed if frozen)
- 1/4 cup butter, softened
- 3/4 teaspoon grated lime zest
- 1/4 teaspoon ground cumin
- Lime wedges for garnish
Measure out 2 tablespoons of salsa to be used for the salsa butter. In a medium-sized mixing bowl, combine the remaining salsa, lime juice, mustard and garlic. Add the salmon fillets and fully coat them in the marinade. Cover and refrigerate for at least 30 minutes.
2. Preparing the Salsa Butter
In a small bowl, use a fork to combine the butter, lime zest, cumin and the 2 tablespoons of salsa. Mix well and set aside.
3. Grilling Salmon
Remove the salmon fillets from the marinade. Throw away any remaining marinade. Season both sides of the fillets with salt and pepper. Next, use a grill brush to coat the clean barbecue grill with oil. Grill the salmon for approximately three minutes per side. You can tell the grilled salmon is done by poking the center with a fork. If the center flakes apart when you poke it with the fork, it’s done.
Serve the grilled salmon immediately, topped with a dollop of the salsa butter. Garnish with lime wedges. This simple grilled salmon recipe is a meal your whole family will enjoy.
