Ingredients
Before you fire up the grill, make sure you have all the ingredients necessary to cook this tasty meal. This recipe serves four, making it perfect for a family dinner or a small get-together.
- 4 broiler-fryer chicken quarters
- 4 tablespoons butter
- 1/2 cup finely-chopped onion
- 1/2 cup wine vinegar
- 1/3 cup low-sodium soy sauce
- 1/4 cup sugarless all-fruit orange marmalade
Directions
Preparation
- In a small frying pan over medium heat, melt the butter. Add the chopped onion, and stir until clear, about five minutes.
- Stir in the vinegar, soy sauce, and orange marmalade. Pour the mixture into a food processor or blender, and blend for about one minute.
- Sprinkle the chicken with salt and pepper, and arrange in a single layer in a shallow bowl. Pour sauce over the chicken, cover, and refrigerate for a minimum of two hours.
Grilling
- Place the chicken on a prepared grill, skin side up, about eight inches from the heat. Pour the marinade in a small saucepan on the grill or side burner, and heat until boiling.
- Grill the chicken, turning and basting with sauce every 10 minutes. Do this for about one hour or until you can insert a fork in the chicken with ease.
