Instructions

  1. Marinating. Set aside 2 tablespoons of salsa. In a medium-sized bowl, combine the remaining salsa, lime juice, mustard and garlic. Add the salmon. Turn the filets to coat in marinade. Cover and refrigerate at least 30 minutes.
  2. Preparing the Salsa Butter. In a small bowl, use a fork to combine the butter, lime zest, cumin and the 2 tablespoons of reserved salsa. Mix well and set aside.
  3. Grilling. Remove the salmon fillets from the marinade. Discard any remaining marinade. Season both sides of the fillet with salt and pepper. Next, brush the clean barbecue grill with oil. Grill the salmon over hot coals, approximately 3 minutes per side or just done and the center flakes with a fork.
  4. Presentation. Serve the salmon immediately with a dollop of the salsa butter. Garnish with lime wedges. Voila! A meal everyone will love.
