{"id":3083,"date":"2023-10-20T09:32:17","date_gmt":"2023-10-20T14:32:17","guid":{"rendered":"https:\/\/www.farmandfleet.com\/blog\/?p=3083"},"modified":"2024-01-16T11:26:23","modified_gmt":"2024-01-16T17:26:23","slug":"canning-headspace-rules","status":"publish","type":"post","link":"https:\/\/www.farmandfleet.com\/blog\/canning-headspace-rules\/","title":{"rendered":"Canning Headspace Rules to Follow"},"content":{"rendered":"<h2 class=\"wp-block-heading\" id=\"learn-about-the-proper-headspace-guidelines-to-follow-while-canning\"><strong>Learn about the proper headspace guidelines to follow while canning.<\/strong><\/h2>\n\n\n<p>If you are relatively new to home canning, you may not know the importance of headspace in canning.<\/p>\n\n\n\n<p>Canning headspace is the empty room that&#8217;s left in the top of your jar after you add the contents and before you put the <a href=\"https:\/\/www.farmandfleet.com\/canning-jar-bands-and-lids\/\" target=\"_blank\" rel=\"noreferrer noopener\">mason jar lid<\/a> on. <\/p>\n\n\n\n<p>No matter what you are canning, or if you&#8217;re <a href=\"https:\/\/www.farmandfleet.com\/pressure-canners\/\" target=\"_blank\" rel=\"noreferrer noopener\">pressure canning<\/a> or <a href=\"https:\/\/www.farmandfleet.com\/water-bath-canners\/\" target=\"_blank\" rel=\"noreferrer noopener\">water bath canning<\/a>, leaving the correct amount of space specified before processing the jar is extremely important.<\/p>\n\n\n<h3 class=\"wp-block-heading\" id=\"leave-enough-headspace\"><strong>Leave enough headspace&#8230;<\/strong><\/h3>\n\n\n<p>The heat applied to a <a href=\"https:\/\/www.farmandfleet.com\/mason-jars\/\" target=\"_blank\" rel=\"noreferrer noopener\">mason jar<\/a> during processing causes the contents inside the jar to expand. As air escapes around the lid, canning headspace will decrease. <\/p>\n\n\n\n<p>If you did not leave enough canning headspace, the contents of the jar could seep under the lid. And the canning jar may not seal right.<\/p>\n\n\n<h3 class=\"wp-block-heading\" id=\"but-dont-leave-too-much-headspace\"><strong>But don&#8217;t leave too much headspace!<\/strong><\/h3>\n\n\n<p>Leaving too much canning headspace can also be a problem. Cooling jars naturally contract and pull the lid down tight to seal the jar completely. <\/p>\n\n\n\n<p>If there is too much canning headspace, the processing time called for in the recipe may not be long enough to drive out the air in the jar. <\/p>\n\n\n\n<p>More air in the mason jar means more oxygen is present to discolor the food and promote rancidity in fats. This can prevent it from sealing properly.<\/p>\n\n\n<h3 class=\"wp-block-heading\" id=\"determining-the-right-amount\"><strong>Determining the right amount<\/strong><\/h3>\n\n\n<p>You need canning headspace when food begins to expand during the canning process, and for forming vacuums upon cooling. <\/p>\n\n\n\n<p>Air expands when heated to high temperatures. The higher the temperature, the greater the expansion. Food expands less than air when heated.<\/p>\n\n\n\n<p>Before you begin a canning recipe, be sure it specifies how much canning headspace to leave, as every recipe is different. The best recipes will tell you how much to leave. <\/p>\n\n\n\n<p>Some canners follow the general rule of 1&#8243; for foods like vegetables, 1\/2&#8243; for fruits, and 1\/4&#8243; for jams and jellies.
